PREPARATION
Bring a small pot of water to a simmer. Carefully add the eggs and poach them until the whites are set but the yolks remain soft and jammy, about 3-4 minutes. Remove the eggs with a slotted spoon and set aside.
While the eggs are poaching, crisp the turkey bacon in a skillet over medium heat until it is lightly browned and cooked through. Remove and place on a paper towel to drain any excess fat.
