4 ounces Lean Ground Turkey
1 medium Sweet Potato
3 large Egg Whites
1 cup Spinach

PREPARATION
Preheat the oven to 400°F. Wash the sweet potato and prick it a few times with a fork. Place it on a baking sheet and roast for about 35-40 minutes until tender.
While the sweet potato is roasting, heat a non-stick skillet over medium heat. Add the lean ground turkey and season with salt and pepper. Cook thoroughly, breaking it up into small pieces.
In a separate bowl, lightly whisk the egg whites. In another non-stick pan, spray a little olive oil or use the teaspoon of olive oil and cook the egg whites over medium heat until just set, stirring frequently to scramble.
