INGREDIENTS
5 oz Lamb Shoulder
2 Medjool Dates
1 oz Sliced Almonds
1/4 medium Onion
1 clove Garlic
200 mL Lamb Broth
1 Tbsp Fresh Rosemary
1 Tbsp Fresh Thyme
1 tsp Extra Virgin Olive Oil
PREPARATION
Preheat a heavy-bottomed pot or Dutch oven over medium heat and add the olive oil.
Season the lamb shoulder with salt and pepper. Sear the lamb on all sides until browned, then remove from the pot.
Add the chopped onion and minced garlic to the pot, and sauté until softened and translucent.
Return the lamb to the pot and add the lamb broth, ensuring the meat is partially submerged. Stir in fresh rosemary and thyme.
Bring the mixture to a simmer, then reduce the heat to low. Cover and braise for about 1.5 to 2 hours until the lamb is tender.
About 15 minutes before serving, stir in the chopped Medjool dates to allow their natural sweetness to infuse the sauce.
Just before serving, sprinkle the sliced almonds over the top. Adjust seasoning to taste and serve hot.
