PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a food processor, pulse the cauliflower florets until it reaches a rice-like consistency. Transfer the cauliflower rice to a microwave-safe bowl and microwave for 4-5 minutes until softened. Allow it to cool slightly.
Place the cooled cauliflower in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
In a large mixing bowl, combine the dried cauliflower with almond flour, eggs, mozzarella, and cottage cheese. Stir in garlic powder, dried oregano, dried basil, salt, and pepper. The mixture should hold together; if too wet, add an extra sprinkle of almond flour.
