INGREDIENTS
1 medium Sweet Potato (114g)
2 Large Eggs (100g)
1/2 cup Egg Whites (120g)
1/2 medium Red Bell Pepper (75g)
1/4 medium Onion (40g)
1 cup Spinach (30g)
1 clove Garlic
1/4 cup Black Beans (43g)
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes for even cooking. Rinse and dice the red bell pepper, and finely dice the onion and garlic.
Heat a non-stick pan over medium heat and add the olive oil. Sauté the onion and garlic until fragrant and slightly softened.
Add the sweet potato cubes to the pan. Cook for about 8-10 minutes, stirring occasionally, until they begin to soften.
Mix in the diced red bell pepper and black beans, cooking for an additional 3-4 minutes. Then add the spinach and cook until just wilted.
Create small wells in the hash and gently crack the whole eggs into them. Pour the egg whites over the hash, distributing them evenly.
Season with salt and pepper, and cover the pan. Let the eggs cook to your desired level of doneness, typically 4-6 minutes for a soft set.
Once cooked, remove the pan from heat and serve warm.
