Preheat your oven to 400°F.
Rinse and drain the white beans if using canned, or prepare your pre-cooked beans.
Chop the red bell pepper, carrot, celery, onion, tomato, and zucchini into bite-sized pieces. Mince the garlic.
Slice the turkey sausage into ½-inch rounds.
In a large mixing bowl, combine the chopped vegetables, turkey sausage slices, minced garlic, white beans, fresh thyme, rosemary, and bay leaf.
Drizzle the mixture with 0.5 tbsp of olive oil and toss until everything is evenly coated.
Spread the mixture onto a lightly greased baking tray in an even layer.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and the sausage has browned slightly.
Remove from the oven, adjust seasonings to taste, and serve warm as a comforting, rustic cassoulet.
