INGREDIENTS
5 oz Salmon Fillet
1 cup Broccoli
1 tsp Olive Oil
1 tbsp Panko Breadcrumbs
2 tbsp Fresh Herbs (Parsley, Dill, Thyme)
1 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F to roast the broccoli.
In a small bowl, mix the panko breadcrumbs, chopped fresh herbs, garlic powder, salt, and pepper.
Pat the salmon fillet dry and gently press the herb and breadcrumb mixture onto the top side of the salmon.
Heat a non-stick skillet over medium-high heat and add a small amount of olive oil. Sear the salmon, herb side down first, for about 2-3 minutes until crispy.
Flip the salmon and cook for an additional 2-3 minutes to finish the cooking process.
Meanwhile, toss the broccoli with the remaining olive oil, salt, and pepper. Spread it on a baking sheet.
Roast the broccoli in the preheated oven for about 10-12 minutes until tender and slightly charred.
Plate the pan-seared salmon with the roasted broccoli on the side and serve immediately.
