250 g Extra Firm Tofu
1 Large Egg
1/2 cup Shelled Edamame
1 cup Cauliflower Rice
1/2 cup Kimchi
1 tsp Sesame Oil
2 cloves Garlic
1 tsp Fresh Ginger
2 Scallions
PREPARATION
Press the extra firm tofu to remove excess moisture and cut it into small cubes.
In a non-stick skillet, heat half of the sesame oil over medium-high heat. Add the tofu cubes and sauté until they become crispy and golden on all sides. Remove from the skillet and set aside.
In the same skillet, add the remaining sesame oil. Sauté the minced garlic, grated ginger, and sliced scallions until fragrant, about 1 minute.
Add the cauliflower rice and stir-fry for 3-4 minutes until it starts to soften.
Stir in the kimchi and shelled edamame, cooking for an additional 2 minutes to blend the flavors.
