½ cup Almond Flour (48g)
1 large Egg
¼ cup shredded Part-Skim Mozzarella Cheese (28g)

1 tsp Mixed Italian Herbs
Pinch of Salt
½ tsp Black Pepper
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Break the cauliflower into florets and pulse them in a food processor until they resemble rice. Microwave the cauliflower rice for 5-7 minutes until softened or steam on the stovetop.
Once cooled, transfer the cauliflower rice to a clean towel or cheesecloth and squeeze out as much moisture as possible.
In a large bowl, combine the cauliflower rice, almond flour, egg, mozzarella cheese, Parmesan, minced garlic, Italian herbs, salt, and pepper. Mix well until a dough forms.
Place the dough on the prepared baking sheet and press it out evenly into a rectangular shape about ½-inch thick.
Bake in the preheated oven for 15-20 minutes until the edges start to turn golden.
Remove from the oven and cut into breadstick shapes. For extra crispiness, return the breadsticks to the oven and bake for an additional 5 minutes.
