This creamy mash brings a satisfying comfort to any meal, enriched with a drizzle of olive oil and a sprinkle of salt and pepper for a perfectly balanced flavor experience.
INGREDIENTS
150g Cauliflower Florets
150g Potato
1.5 cups Plain Nonfat Greek Yogurt
1 tsp Olive Oil
1 Garlic Clove
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Peel the garlic clove (or leave skin on for a milder flavor) and place it on a small piece of foil with a drizzle of olive oil. Wrap the foil and roast in the oven for about 20 minutes until soft and fragrant.
Meanwhile, roughly chop the cauliflower into florets and peel the potato. Boil both the cauliflower and potato in a pot of salted water until tender, about 15 minutes.
Drain the vegetables and place them in a large bowl.
Squeeze the roasted garlic out of its skin and add it to the vegetables.
Add the nonfat Greek yogurt to the mixture along with the remaining olive oil, then mash or blend until smooth and creamy.
Season with salt and pepper to taste. Serve warm.
