INGREDIENTS
5 oz Ground Turkey
1 medium Sweet Potato
1/2 Red Bell Pepper
1 cup Baby Spinach
1/4 medium Red Onion
1 tsp Olive Oil
1 clove Garlic
1 tsp Mixed Herbs (Rosemary & Thyme)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Peel and dice the sweet potato into 1/2-inch cubes. Toss them lightly with olive oil, salt, and pepper on a baking sheet.
Roast the sweet potato cubes in the oven for 20-25 minutes until tender and slightly crispy on the edges.
While the sweet potatoes roast, finely dice the red onion, red bell pepper, and garlic.
In a large skillet over medium heat, add a splash of olive oil and sauté the red onion, red bell pepper, and garlic until they begin to soften, about 3-4 minutes.
Add the ground turkey to the skillet, breaking it up with a spoon. Season with mixed herbs, salt, and pepper, cooking until the turkey is browned and fully cooked, about 6-8 minutes.
Once the sweet potatoes are roasted, add them along with the baby spinach to the skillet. Stir well and let the spinach wilt slightly, about 1-2 minutes.
Taste and adjust seasonings as needed before serving.
