INGREDIENTS
6 oz Lean Sirloin Steak (170g)
100g Baby Potatoes
0.5 tbsp Unsalted Butter (7g)
1 Garlic Clove
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) to roast the baby potatoes.
Wash the baby potatoes and cut them in halves if they are larger; toss them with a drizzle of olive oil, salt, pepper, and chopped rosemary.
Spread the potatoes onto a baking sheet and roast in the preheated oven for about 20-25 minutes, or until golden and tender.
While the potatoes are roasting, pat the steak dry with paper towels and season both sides generously with salt and pepper.
Heat a skillet over medium-high heat until it is very hot. Add a small drizzle of oil.
Place the steak in the skillet and sear for about 3-4 minutes on each side, or until a nice crust forms and the desired doneness is reached.
During the last minute of cooking, add the unsalted butter, garlic clove (crushed), and thyme sprigs to the pan. Spoon the melting herb-garlic butter over the steak to enhance the flavor.
Remove the steak from the skillet and allow it to rest for a few minutes. Serve alongside the roasted baby potatoes and garnish with fresh rosemary if desired.
