1/3 cup dry quinoa
2 large eggs
1/4 cup rolled oats
1/4 cup chopped red bell pepper

1/3 cup shredded low-fat cheddar cheese
1 tsp olive oil
1 tsp smoked paprika
1/2 tsp ground cumin

PREPARATION
In a small pot, rinse the quinoa and add double the amount of water. Bring to a boil, then reduce heat and simmer until the quinoa is fully cooked and water is absorbed. Allow it to cool.
