5 oz Chicken Breast (142g)
1 tbsp Unsalted Butter (14g)
2 cloves Garlic
2 tbsp Fresh Parsley
2 tbsp Fresh Thyme
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Clean the mushrooms with a damp cloth and slice them in half if they are large.
Peel and finely mince the garlic.
Heat a skillet over medium heat and melt the unsalted butter. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the mushrooms to the skillet, season with salt and pepper, and toss to coat in the garlic butter.
Transfer the mushrooms to a baking sheet and roast in the preheated oven for about 12-15 minutes until tender and slightly caramelized.
While the mushrooms roast, season the chicken breast with salt and pepper. In a separate skillet over medium-high heat, sear the chicken breast for about 3-4 minutes per side until cooked through.
Slice the cooked chicken breast into bite-sized pieces.
