INGREDIENTS
300g Extra-Firm Tofu
0.5 cup Shelled Edamame (75g)
1 medium Red Bell Pepper (120g)
1 cup Broccoli (90g)
1 medium Carrot (61g)
2 cloves Garlic
1 tbsp Fresh Ginger
1 tsp Sesame Oil
1 tbsp Soy Sauce
1 tsp Cornstarch
1 tsp Sesame Seeds
1 stalk Green Onion
PREPARATION
Press the tofu to remove excess moisture. Cut the tofu into 1-inch cubes.
In a small bowl, whisk together soy sauce and cornstarch. Gently toss the tofu cubes in the mixture to coat evenly.
Heat sesame oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes and stir-fry until all sides are golden and crispy, about 6-8 minutes. Remove tofu and set aside.
In the same pan, add minced garlic and grated ginger. Sauté briefly until fragrant, about 30 seconds.
Add chopped red bell pepper, broccoli florets, sliced carrot, and shelled edamame. Stir-fry the vegetables for 4-5 minutes until just tender yet still crisp.
Return the crispy tofu to the pan and toss with the vegetables. Garnish with sesame seeds and sliced green onion.
Serve hot and enjoy your nutritious and flavorful meal.
