PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Peel (if desired) and dice the sweet potato into small cubes. Toss with half the olive oil, a pinch of salt, and smoked paprika. Spread evenly on the baking sheet and roast in the oven for about 20-25 minutes until tender and lightly caramelized.
