INGREDIENTS
200g Cauliflower
1 large Egg
1/2 cup shredded Part-Skim Mozzarella Cheese
1/4 cup Tomato Sauce
2 tbsp grated Parmesan Cheese
1 tsp Olive Oil
8 Fresh Basil leaves
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F. Line a baking sheet with parchment paper.
Rice the cauliflower by pulsing it in a food processor until it resembles rice. Transfer it to a microwave-safe bowl and microwave for about 5 minutes until softened.
Place the cooked cauliflower in a clean towel and squeeze out as much moisture as possible.
Mix the cauliflower rice with the egg, a pinch of salt and pepper. Press the mixture onto the baking sheet in a thin, circular pizza base.
Bake the crust for 15-20 minutes, or until it begins to turn golden and firm up.
Remove the crust from the oven. Spread the tomato sauce evenly over the crust, then sprinkle with shredded mozzarella and grated Parmesan cheese.
Return the pizza to the oven and bake for an additional 8-10 minutes, until the cheese is melted and slightly bubbly.
Garnish with fresh basil leaves and a drizzle of olive oil before serving.
