1 medium Potato (150g)
3 cloves Garlic (9g), roasted
1 teaspoon Extra Virgin Olive Oil (5g)
1 cup Nonfat Greek Yogurt (245g)
1 ounce Toasted Almond Slivers (28g)
PREPARATION
Preheat the oven to 400°F. Wrap the garlic cloves in a small piece of foil with a drizzle of olive oil and roast for about 25 minutes until soft and caramelized.
While the garlic is roasting, chop the cauliflower into florets and peel and cube the potato.
Steam the cauliflower and potato cubes until very tender, about 15 minutes.
