INGREDIENTS
4 oz Ground Pork (80/20)
1 Large Egg
1/2 cup Firm Tofu
1 cup Green Cabbage, shredded
2 cloves Garlic
1 tsp Fresh Ginger, minced
1 tbsp Low-Sodium Soy Sauce
1 tsp Vegetable Oil
Pinch of Red Pepper Flakes
2 tbsp Green Onions, chopped
PREPARATION
Heat the vegetable oil in a nonstick skillet or wok over medium-high heat.
Add 2 minced garlic cloves and 1 teaspoon of minced ginger; stir-fry for about 30 seconds until fragrant.
Add the ground pork to the pan. Break it up as it cooks until browned and crispy, about 5-6 minutes. Drain any excess fat if necessary.
Crack the egg into the pan and scramble it with the pork until just set.
Gently stir in the firm tofu cut into small cubes and the shredded cabbage. Cook for another 2-3 minutes until the cabbage begins to soften and the tofu warms through.
Stir in the low-sodium soy sauce and a pinch of red pepper flakes so all ingredients are evenly coated.
Remove from heat and garnish with chopped green onions before serving.
