INGREDIENTS
5 oz Mahi Mahi Fillet
20 g Raw Unsalted Pistachios (crushed)
1/2 medium Mango, diced
1 tbsp Red Onion, finely chopped
1 tbsp Red Bell Pepper, finely chopped
2 tbsp Fresh Cilantro, chopped
1 small Jalapeño, deseeded & chopped
1 tbsp Lime Juice
1 tsp Extra Virgin Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Finely crush the pistachios in a food processor until they form a coarse crumb. Transfer to a shallow dish.
Season the mahi mahi fillet with salt and pepper. Brush lightly with olive oil.
Press the fish on both sides into the crushed pistachios to ensure a nice, even coating.
Place the crusted fish on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the fish is cooked through and flakes easily.
While the fish bakes, prepare the mango salsa: In a bowl, combine diced mango, chopped red onion, red bell pepper, jalapeño, and cilantro. Add the lime juice and mix well.
Once the fish is done, plate it and top with a generous spoonful of mango salsa. Serve immediately.
