INGREDIENTS
6 oz Top Sirloin Steak (170g)
100g Baby Potatoes
1 tbsp Unsalted Butter
1 Garlic Clove
1 tsp Olive Oil
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F (200°C). Toss the baby potatoes with olive oil, a pinch of salt, pepper, and half of the chopped rosemary and thyme. Spread them on a baking sheet and roast for 20-25 minutes until tender and slightly crispy.
While the potatoes roast, pat the steak dry and season generously with salt and pepper on both sides.
Heat a skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes per side for medium-rare, adjusting the time as needed to reach your desired doneness.
During the last minute of cooking, add the butter, garlic (crushed or minced), and the remaining rosemary and thyme to the skillet. Spoon the infusing butter over the steak to enhance the flavor.
Remove the steak from the pan and let it rest for a few minutes. Slice it against the grain and serve alongside the roasted baby potatoes.
Drizzle any remaining herb-infused butter from the pan over the steak for extra flavor.
