3 Large Eggs (150g total)
1 Egg White (33g)
1/2 cup Black Beans (130g)
1/2 medium Red Bell Pepper (50g)
1/2 medium Yellow Onion (50g)
2 cups Spinach (60g)
1 tsp Olive Oil (5g)
Salt, Pepper, Paprika & Garlic Powder to taste
PREPARATION
Wash and peel the sweet potato, then dice it into small cubes.
Dice the red bell pepper and chop the yellow onion finely.
Heat a non-stick skillet over medium heat and add 1 teaspoon of olive oil.
Sauté the onion and red bell pepper until they soften, about 3-4 minutes.
Add the sweet potato cubes to the skillet, stirring occasionally. Cook for about 8-10 minutes until the sweet potato starts to become tender.
