This dish offers a satisfying crunch and a burst of aromatic garlic and ginger, balanced by the toasty flavor of sesame seeds, making it a delicious and protein-packed meal.
INGREDIENTS
200g Extra-Firm Tofu
100g Shelled Edamame
1 cup Mixed Vegetables (Bell Peppers & Broccoli)
1 tbsp Sesame Seeds
2 tbsp Low Sodium Soy Sauce
1 tsp Sesame Oil
1 clove Garlic, minced
1 tsp Fresh Ginger, grated
1 tsp Honey
PREPARATION
Press the extra-firm tofu to remove excess moisture, then cut into bite-sized cubes.
In a bowl, whisk together low sodium soy sauce, sesame oil, garlic, fresh ginger, and honey to create the glaze.
Gently toss the tofu cubes in half of the glaze and let them marinate for about 10 minutes.
Heat a non-stick skillet over medium-high heat. Add the tofu cubes and cook until all sides become golden and slightly crispy, about 5-7 minutes.
Remove the tofu and add the mixed vegetables to the same skillet. Stir-fry for 2-3 minutes until they are vibrant but still crisp.
Return the tofu to the skillet along with the shelled edamame and pour over the remaining glaze. Toss everything together until well-coated and heated through, about 2 minutes.
Sprinkle sesame seeds over the stir-fry and serve immediately, enjoying the perfect balance of crispy tofu and tender vegetables.
