INGREDIENTS
5 oz Sirloin Steak
100 g Baby Potatoes
1 tsp Butter
1 tsp Olive Oil
1 Garlic Clove
1 tbsp Fresh Herbs (Rosemary & Thyme)
PREPARATION
Preheat your oven to 400°F for the potatoes.
Wash the baby potatoes and toss them with a drizzle of olive oil, salt, pepper, and half of the chopped fresh herbs. Spread them on a baking sheet.
Roast the potatoes in the oven for about 25-30 minutes or until tender and golden.
Meanwhile, pat the sirloin steak dry and season it with salt, pepper, and the remaining chopped herbs. Mince the garlic clove and set aside.
Heat a skillet over medium-high heat and add 1 tsp olive oil. When the oil is shimmering, add the steak.
Sear the steak for about 3-4 minutes per side for medium-rare, adjusting the time to reach your preferred doneness.
In the final minute of cooking, add the butter and minced garlic to the pan. Spoon the melted herb-garlic butter over the steak continuously for added flavor.
Remove the steak from the pan and let it rest for a few minutes.
Serve the steak with a side of roasted baby potatoes, drizzling any remaining herb butter from the pan over the top.
