INGREDIENTS
1.5 cups riced cauliflower (150g)
1 large egg (50g)
0.75 cup part-skim mozzarella cheese (75g)
2 tbsp grated Parmesan cheese (10g)
0.25 cup tomato sauce (60g)
1 medium fresh tomato, sliced (100g)
10 fresh basil leaves (2g)
1 tsp olive oil (5g)
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a bowl, combine the riced cauliflower and the egg. Mix well until the ingredients are thoroughly incorporated. If available, you can microwave the riced cauliflower for 3-4 minutes to soften it slightly before mixing.
Press the cauliflower mixture onto the baking sheet in a thin, even circle to form the pizza crust. Sprinkle the grated Parmesan cheese evenly over the crust.
Bake in the preheated oven for 15-20 minutes or until the edges begin to turn golden and the crust is set.
Remove the crust from the oven and spread the tomato sauce over the surface. Sprinkle the part-skim mozzarella cheese evenly on top.
Return to the oven and bake for an additional 6-8 minutes until the cheese is melted and bubbly.
Remove from the oven, then top with fresh tomato slices, basil leaves, and drizzle with olive oil.
Allow the pizza to cool for a couple of minutes before slicing and serving. Enjoy your nutritious, flavorful Cauliflower Crust Margherita Pizza!
