PREPARATION
Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and the chopped fresh herbs.
In a skillet over medium-high heat, add the olive oil. Once the oil is hot, add the chicken thighs skin-side down. Sear them for about 5-7 minutes until the skin is crispy and golden.
