Enjoy the comforting contrast of crispy-skinned baked sweet potato paired with a creamy, tangy Greek yogurt blend enhanced by a medley of fresh herbs. This dish offers a satisfying texture and bright flavor profile, perfect for any meal of the day.
INGREDIENTS
1 medium Sweet Potato (150g)
1.5 cups Nonfat Plain Greek Yogurt (340g)
1 teaspoon Olive Oil
1 tablespoon Fresh Parsley
1 tablespoon Fresh Chives
1 teaspoon Lemon Juice
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Rinse the sweet potato thoroughly to ensure the skin is clean and pat dry. Rub it lightly with olive oil and season with salt and pepper.
Place the sweet potato on a baking sheet and roast in the oven for 35-45 minutes, or until the skin is crispy and the inside is tender.
While the sweet potato is baking, in a small bowl, combine the Greek yogurt with chopped fresh parsley and chives. Stir in lemon juice and a pinch of salt and pepper.
Once the sweet potato is done, slice it open and gently fluff the inside. Top with a generous dollop of the herbed Greek yogurt mixture.
Serve warm and enjoy the contrast of crispy skin, soft interior, and refreshing yogurt.
