INGREDIENTS
250g Firm Tofu
1 cup Shelled Edamame (155g)
1 tbsp Sesame Seeds
1 tsp Olive Oil
2 cups Mixed Greens
1 tbsp Tahini
1 tsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
Coat the tofu cubes lightly with salt and pepper. Sprinkle sesame seeds over the cubes, pressing gently to make the seeds adhere.
Heat olive oil in a non-stick skillet over medium heat. Add the tofu cubes and sauté until all sides are golden and crispy, about 8-10 minutes.
While the tofu cooks, prepare the creamy lemon tahini drizzle by whisking tahini, lemon juice, a pinch of salt and pepper, and a splash of water in a small bowl until smooth.
In a serving bowl, layer mixed greens and pour in warmed shelled edamame.
Top the greens and edamame with the crispy tofu cubes, then drizzle the lemon tahini sauce evenly over the bowl.
Serve immediately and enjoy this protein-packed, satisfying meal.
