INGREDIENTS
8 oz Button Mushrooms (227g)
3 cloves Garlic
1 tbsp Unsalted Butter
2 tbsp Fresh Parsley
2 tbsp Fresh Thyme
1 tsp Extra Virgin Olive Oil
4 oz Chicken Breast (113g)
Salt and Black Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Clean and slice the mushrooms, then combine them in a bowl with minced garlic, chopped fresh parsley, and thyme.
Melt the butter in a small saucepan on low heat and mix in the extra virgin olive oil. Drizzle the butter mixture over the mushrooms, tossing gently to coat.
Season the mushrooms with salt and black pepper, then spread them out on a baking sheet in a single layer.
Roast the mushrooms in the preheated oven for about 20 minutes, stirring halfway through for even cooking.
While the mushrooms roast, season the chicken breast with salt and pepper. Heat a skillet over medium-high heat and sear the chicken breast for about 4-5 minutes per side until fully cooked and golden.
Once cooked, slice the chicken breast and plate it alongside or on top of the roasted mushrooms.
Garnish with additional fresh herbs if desired and serve warm.
