150g Potato
1/2 cup Cannellini Beans (approx. 125g)
1/2 cup Plain Nonfat Greek Yogurt

1 tsp Olive Oil
2 cloves Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C). Place the garlic cloves (with skin on) on a small piece of foil, drizzle with a few drops of olive oil, and seal the foil. Roast in the oven for about 20-25 minutes until soft and fragrant.
While the garlic is roasting, steam the cauliflower florets and diced potato until they are tender, about 12-15 minutes.
Drain the steamed vegetables and transfer them to a large mixing bowl. Add the rinsed cannellini beans.
Squeeze the roasted garlic out of its skins into the bowl. Add the Greek yogurt and cottage cheese.
