INGREDIENTS
4 oz Boneless Skinless Chicken Breast (113g)
1/4 cup Parmesan Cheese (28g)
1/4 cup Panko Breadcrumbs (30g)
1 tsp Olive Oil (5g)
1/3 cup Tomato Sauce (80g)
2 tbsp Fresh Basil, chopped
2 tbsp Fresh Parsley, chopped
PREPARATION
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Pound the chicken breast evenly to ensure uniform thickness for even cooking.
In a shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, chopped basil, and parsley.
Lightly brush the chicken with olive oil on both sides, then press each piece into the breadcrumb mixture to coat evenly.
Place the coated chicken on the prepared baking sheet. Bake for 20-25 minutes, turning halfway if desired, until the chicken reaches an internal temperature of 165°F (74°C) and the coating is golden and crispy.
In the last 5 minutes of baking, spoon tomato sauce over each piece of chicken to warm slightly in the oven.
Remove from the oven and serve immediately, optionally garnished with extra fresh herbs.
