Crispy Baked Chicken Parmesan with Fresh Herbs
Enjoy a lighter twist on a classic Italian favorite. Tender chicken breast is coated in a crisp Italian breadcrumb mix, lightly baked and finished with a sprinkle of Parmesan cheese and a medley of fragrant fresh herbs, delivering satisfying flavor without the heaviness.
INGREDIENTS
5 oz Chicken Breast (141g)
1 large Egg White (33g)
1/4 cup Italian Style Breadcrumbs (28g)
2 tbsp Grated Parmesan Cheese (10g)
2 tbsp Fresh Basil
2 tbsp Fresh Parsley
1 tbsp Fresh Oregano
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Pound the chicken breast lightly to ensure even thickness. Season both sides with a pinch of salt and black pepper.
In a shallow bowl, whisk the egg white until slightly frothy. In a separate shallow dish, combine the Italian breadcrumbs with the grated Parmesan cheese, chopped fresh basil, parsley, and oregano.
Dip the chicken breast into the egg white, allowing any excess to drip off, then dredge it in the breadcrumb and herb mixture, pressing gently to adhere.
Place the coated chicken on the prepared baking sheet. Lightly spray the top with a bit of olive oil spray if desired for extra crispiness.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden and crispy. Check that the internal temperature reaches 165°F.
Let rest for a few minutes before slicing and serving.
