Pan-Seared Herb Crusted Salmon with Garlic Roasted Broccoli
Enjoy a vibrant dish where succulent pan-seared salmon meets a crunchy, garlic-infused broccoli. The herb crust on the salmon enhances its natural flavors while the roasted broccoli offers a delightful bite, making this meal both delicious and nutritionally balanced.
INGREDIENTS
6 oz Salmon Fillet
1 cup Broccoli, chopped
2 cloves Garlic, minced
1 tsp Olive Oil
1 tbsp Fresh Mixed Herbs (Parsley & Dill)
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F for roasting the broccoli.
In a small bowl, mix the fresh herbs, a pinch of salt, and black pepper.
Pat the salmon fillet dry with a paper towel, then press the herb mixture onto the top side to create a crust.
Heat a non-stick skillet over medium-high heat. Add the salmon, herb side down, and sear for about 2-3 minutes until a good crust forms.
Flip the salmon and cook for an additional 2 minutes. Then transfer the salmon to a baking sheet, herb side up.
Meanwhile, toss the chopped broccoli with minced garlic, olive oil, a pinch of salt, and pepper on a separate baking pan.
Place both the salmon and broccoli in the oven. Roast the broccoli for about 10-12 minutes until tender and slightly crispy, and finish the salmon in the oven for about 4-6 minutes depending on thickness.
Remove both from the oven. Let the salmon rest for a minute before serving alongside the garlic roasted broccoli.
