INGREDIENTS
4 oz Shrimp, peeled and deveined (113g)
1/2 medium Avocado (100g)
1/4 cup Nonfat Greek Yogurt (60g)
4 Cherry Tomatoes
1/4 cup diced Cucumber (30g)
A small slice of Red Onion (10g)
2 Tbsp Lime Juice
2 Tbsp Orange Juice
2 Tbsp chopped Fresh Cilantro
Salt and Pepper to taste
PREPARATION
Peel, devein, and rinse the shrimp. Pat them dry with paper towels.
In a bowl, combine the shrimp with lime juice, orange juice, salt, and pepper. Allow to marinate in the refrigerator for about 15-20 minutes until the shrimp start to turn opaque.
While marinating, dice the avocado, halve the cherry tomatoes, dice the cucumber, and thinly slice a small portion of red onion. Roughly chop the fresh cilantro.
Once the shrimp are ready, combine them with the diced avocado, tomatoes, cucumber, and red onion in a mixing bowl.
Gently fold in the nonfat Greek yogurt and chopped cilantro until all ingredients are evenly coated.
Taste and adjust salt and pepper if needed. Serve immediately for best freshness, or chill for an additional 10 minutes for a colder ceviche experience.
