INGREDIENTS
5 oz Salmon Fillet (142g)
1/2 medium Red Bell Pepper (75g)
1/2 cup Zucchini (61g)
1 tsp Olive Oil
2 tbsp Fresh Herbs (Parsley, Dill)
1 clove Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Line a baking tray with parchment paper. Place the salmon fillet in the center.
In a small bowl, mix the chopped fresh herbs with minced garlic, lemon juice, salt, and pepper.
Spread the herb mixture evenly over the top of the salmon to form a crust.
Chop the red bell pepper into strips and slice the zucchini. Toss them in a bowl with the olive oil, a pinch of salt and pepper.
Arrange the vegetables around the salmon on the baking tray.
Bake in the preheated oven for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
Serve immediately and enjoy your balanced, flavorful meal.
