4 cups Cauliflower florets (320g)
2 Large Eggs
1/4 cup Grated Parmesan Cheese (25g)
1/4 cup Almond Flour (28g)
2 Roasted Garlic cloves
1 tsp Olive Oil
1 tsp Dried Oregano
1 tsp Dried Basil
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Steam or lightly microwave the cauliflower florets until tender (about 5-7 minutes), then allow to cool slightly.
In a food processor, pulse the cooked cauliflower with roasted garlic until a rice-like texture is achieved. Transfer to a large mixing bowl.
Add the eggs, grated Parmesan, almond flour, dried oregano, dried basil, salt, black pepper, and olive oil to the cauliflower mixture. Stir until well combined. The mixture should hold together; if too wet, add a little more almond flour.
Transfer the mixture onto the prepared baking sheet and press it into an even, rectangular layer about 1/4 inch thick.
Bake for 18-22 minutes or until the edges begin to turn golden brown.
Remove from the oven and let cool for a few minutes before slicing into breadstick shapes.
