Crispy Sesame-Glazed Tofu Stir-Fry
A vibrant, satisfying stir-fry featuring crispy tofu, edamame, and a rainbow of fresh vegetables tossed in a savory sesame-glaze. This dish offers a delightful balance of textures with the tofu's crisp exterior and the crunch of fresh broccoli and bell peppers, all elevated by aromatic garlic and ginger.
INGREDIENTS
250g Firm Tofu
100g Shelled Edamame
100g Broccoli
50g Red Bell Pepper
50g Carrot
1 tsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tsp Sesame Seeds
2 Garlic cloves
1 tsp Fresh Ginger
2 tbsp Scallions
PREPARATION
Press the tofu to remove excess moisture, then cut into 1-inch cubes.
Chop the broccoli into florets, slice the red bell pepper into strips, and julienne the carrot. Mince the garlic and ginger, and slice the scallions.
In a large skillet or wok, heat the sesame oil over medium-high heat.
Add the minced garlic and ginger and sauté for about 30 seconds until fragrant.
Add the tofu cubes to the skillet and stir-fry until they begin to turn golden and slightly crispy, about 4-5 minutes.
Mix in the broccoli, red bell pepper, and carrot. Stir-fry for an additional 3 minutes until vegetables are tender-crisp.
Stir in the edamame and drizzle the low sodium soy sauce over the mixture. Continue to toss for 1-2 minutes to combine flavors.
Finish by sprinkling sesame seeds and sliced scallions over the stir-fry before serving.
