1 medium head Cauliflower (600g)
2 large Eggs
1/4 cup Grated Parmesan Cheese (25g)
1/2 cup Low-Fat Mozzarella Cheese, shredded (56g)
1/3 cup Chickpea Flour (30g)
1 tablespoon Olive Oil
2 cloves Garlic
2 tablespoons Fresh Mixed Herbs (chopped basil & parsley)
1 scoop Unflavored Whey Protein Isolate (30g)
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Break the cauliflower into florets and pulse in a food processor until you get a rice-like texture. Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for about 5 minutes until softened. Let it cool slightly.
Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
Combine the dried cauliflower, eggs, grated Parmesan, shredded mozzarella, chickpea flour, whey protein isolate, minced garlic, chopped herbs, and olive oil in a large mixing bowl. Stir until well incorporated.
Transfer the mixture onto the prepared baking sheet and press it out evenly into a rectangular shape about 1/2 inch thick.
Bake in the preheated oven for 20-25 minutes until the edges start to crisp and the center sets.
