PREPARATION
Press the tofu for at least 10 minutes to remove excess moisture, then cut into small cubes.
In a small bowl, combine the soy sauce, rice vinegar, cornstarch, minced garlic, and grated ginger to create a light sauce.
Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.
