INGREDIENTS
1/2 cup dry Red Lentils
1 medium Sweet Potato
1 medium Carrot
1 Celery Stalk
1 cup Diced Tomatoes (Canned)
1 cup Spinach
1/2 medium Onion
2 cloves Garlic
1/2 tsp Smoked Paprika
1/2 tsp Ground Cumin
2 cups Vegetable Broth
PREPARATION
Rinse the red lentils under cold water and set aside.
Peel and dice the sweet potato and carrot into small cubes. Slice the celery and roughly chop the spinach. Finely chop the onion and garlic.
In a large pot, sauté the chopped onion and garlic over medium heat until they become translucent and fragrant.
Add the diced sweet potato, carrot, and celery to the pot and cook for a few minutes to begin softening the vegetables.
Stir in the red lentils, smoked paprika, and ground cumin. Pour in the vegetable broth and diced tomatoes.
Bring the stew to a simmer and let it cook for 20-25 minutes, or until the lentils and vegetables are tender.
A few minutes before serving, stir in the spinach until just wilted.
Taste and adjust seasoning if needed, then serve warm.
