INGREDIENTS
7 ounces Shrimp (peeled and deveined)
1.5 cups Cauliflower Rice
1.5 tbsp Olive Oil
1/4 portion Avocado (approx. 50g)
1 clove Garlic
1 Lemon wedge
2 tbsp Fresh Herbs (Parsley & Cilantro)
Salt & Pepper to taste
PREPARATION
Pat the shrimp dry and season lightly with salt and pepper.
In a large skillet, heat 1.5 tablespoons of olive oil over medium-high heat.
Add the minced garlic and saut é until fragrant, about 30 seconds.
Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque.
While the shrimp cooks, in a separate pan gently heat the cauliflower rice over medium heat. Stir in a pinch of salt, freshly chopped herbs, and a squeeze of lemon juice to infuse flavor.
Once the shrimp are done, plate a serving of herb cauliflower rice, top with the pan-seared shrimp, and drizzle any remaining juices from the skillet over the top.
Garnish with extra fresh herbs and serve with an accompanying lemon wedge and sliced avocado on the side.
