INGREDIENTS
250 grams Extra Firm Tofu
200 grams Cauliflower Rice
75 grams Shelled Edamame
1 tablespoon Olive Oil
2 cloves Garlic
1 tablespoon Fresh Ginger, grated
1 tablespoon Soy Sauce
1 teaspoon Lemon Juice
PREPARATION
Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
Heat half of the olive oil in a non-stick skillet over medium-high heat. Add tofu cubes and pan-fry until crispy and golden on all sides, about 8-10 minutes. Remove tofu and set aside.
In the same pan, add the remaining olive oil. Sauté minced garlic and grated ginger until fragrant, about 1 minute, being careful not to burn them.
Add the cauliflower rice to the pan and stir-fry for about 3-4 minutes until it becomes slightly tender.
Stir in the shelled edamame and soy sauce. Cook for an additional 2 minutes to let the flavors meld.
Return the crispy tofu to the pan and gently toss everything together. Drizzle with lemon juice and adjust seasoning if needed.
Plate the mixture and garnish with extra fresh herbs if desired before serving.
