1 cup Nonfat Greek Yogurt

PREPARATION
Preheat the oven to 400°F. Wrap garlic cloves in foil with a drizzle of olive oil and a pinch of salt, and roast for about 25-30 minutes until soft and slightly caramelized.
While the garlic roasts, cut the cauliflower into florets and steam until tender, about 10-12 minutes.
Place the steamed cauliflower in a food processor or blender. Add the roasted garlic (squeeze out the softened garlic from its skins), nonfat Greek yogurt, and unsweetened almond milk. Blend until smooth and creamy. Season with salt and pepper to taste.
