INGREDIENTS
4 oz Lean Ground Pork (90% lean)
1 oz Rice Noodles (dry)
1 large Egg
1 cup Bean Sprouts
1/2 cup Red Bell Pepper, diced
1 tsp Fresh Ginger, grated
1 clove Garlic, minced
1 tbsp Chili Paste
2 tbsp Green Onions, sliced
PREPARATION
Cook the rice noodles according to package instructions, then drain and set aside.
In a pan over medium heat, add the lean ground pork. Cook until browned, breaking it apart as it cooks.
Add the minced garlic and grated ginger to the pork and stir for about 1 minute until fragrant.
Mix in the chili paste and diced red bell pepper, cooking for another 2 minutes until the pepper softens slightly.
Push the pork mixture to the side of the pan and crack the egg into the space. Scramble the egg until nearly cooked and then blend it with the pork.
Add the cooked rice noodles and bean sprouts to the pan, tossing everything together to combine evenly.
Finally, garnish with sliced green onions before serving.
