Creamy Cauliflower-Potato Mash with Roasted Garlic
A soothing, creamy mash that blends tender cauliflower and potato with the deep, mellow flavor of roasted garlic. Enhanced with a duo of nonfat Greek yogurt and low-fat cottage cheese for a creamy texture and a protein boost, this dish is both comforting and nutritious.
INGREDIENTS
1 cup Cauliflower florets (107g)
1 medium Potato (150g)
2/3 cup Nonfat Greek Yogurt (160g)
1/2 cup Low-Fat Cottage Cheese (120g)
1 tsp Olive Oil
3 cloves Roasted Garlic
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F. Place the garlic cloves (with skins on) on a small piece of foil, drizzle with a tiny amount of olive oil, seal the foil, and roast for about 25-30 minutes until soft and fragrant.
Meanwhile, peel and dice the potato and break the cauliflower into florets. Steam both until tender, about 12-15 minutes.
Once steamed, transfer the potato and cauliflower into a large bowl. Squeeze the roasted garlic out of its skins and add to the bowl.
Add the nonfat Greek yogurt and low-fat cottage cheese to the vegetables. Drizzle in the olive oil and season with salt and pepper.
Mash the mixture using a potato masher or blend lightly for a smoother texture. Adjust seasoning as needed.
Serve warm as a hearty side or a light main dish.
