INGREDIENTS
200g Extra-Firm Tofu
0.5 cup Shelled Edamame
0.5 cup Cooked Quinoa
1 cup Broccoli
1 medium Carrot
0.5 medium Red Bell Pepper
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Soy Sauce
1 tsp Honey
1 clove Garlic (minced)
1 tsp Ginger (minced)
PREPARATION
Press the tofu to remove excess moisture and then cut it into cubes.
In a bowl, whisk together soy sauce, honey, minced garlic, minced ginger, and sesame oil to create the glaze.
Heat a non-stick pan over medium-high heat, add a splash of oil if needed, and sauté the tofu cubes until they are golden and crispy on all sides.
Remove the tofu and set aside. In the same pan, add broccoli, carrot slices, and red bell pepper. Stir-fry for 3-4 minutes until the vegetables are just tender but still crisp.
Add the shelled edamame and cooked quinoa to the vegetables, stirring gently to combine.
Return the crispy tofu to the pan and pour the glaze over the mixture. Toss everything together to coat evenly.
Sprinkle sesame seeds on top and stir-fry for another minute to meld the flavors.
Serve hot and enjoy your balanced, flavorful stir-fry.
