PREPARATION
Preheat your oven to 375°F and lightly grease a small baking dish or pie pan.
In a large bowl, roughly chop the spinach if needed. Add the diced red onion, dried dill, salt, and pepper.
Whisk together the 2 whole eggs and the egg white in a separate bowl, then pour into the spinach mixture. Crumble the feta cheese and gently fold it in.
Lay a phyllo sheet on a clean surface and lightly brush it with olive oil. Place the second phyllo sheet on top and brush it again with olive oil.
