Rice the cauliflower by pulsing florets in a food processor until it resembles rice. Measure out 200 grams.
Place the riced cauliflower in a microwave-safe bowl and microwave for 5-7 minutes until softened. Let cool slightly.
Mix the cooked cauliflower with 1 whole egg and 2 egg whites in a bowl. Stir in the 100 grams of shredded part-skim mozzarella until combined.
Line a baking sheet with parchment paper. Transfer the cauliflower mixture onto the sheet and press it out into a thin, even circle to form a crust.
Bake the crust in the preheated oven for 12-15 minutes until it starts to turn golden and firm up.
