INGREDIENTS
6.5 oz Salmon Fillet
1 cup Green Beans
1 tsp Olive Oil
0.6 cup Mashed Sweet Potatoes
2 cloves Garlic
Salt & Pepper to taste
1 tbsp Lemon Juice
PREPARATION
Pat dry the salmon fillet and season both sides with salt and pepper.
Heat a non-stick pan over medium-high heat. Add the salmon, skin side down if applicable, and sear for about 3-4 minutes on each side until a golden crust forms and the inside remains tender.
While the salmon is cooking, blanch the green beans in boiling water for 2-3 minutes until they are crisp-tender, then drain.
In a separate pan, heat 1 teaspoon of olive oil over medium heat then add minced garlic. Sauté the garlic for about 30 seconds before tossing in the blanched green beans. Sauté together for another 2 minutes to infuse the garlic flavor.
Warm the pre-cooked mashed sweet potatoes gently either in a small pot on low heat or in the microwave. Stir in a little lemon juice, salt, and pepper to taste.
Plate the seared salmon alongside the garlic green beans and a serving of mashed sweet potatoes. Optionally, drizzle a bit more lemon juice over the salmon for an extra burst of freshness.
