PREPARATION
Preheat your oven to 400°F (200°C).
Wash and chop the cauliflower into florets, then steam or microwave until tender. Once cooked, let it cool and transfer to a food processor. Pulse until you achieve a rice-like consistency.
Place the cauliflower rice in a large mixing bowl. Add the egg, cottage cheese, almond flour, and grated Parmesan cheese. Mince the garlic and add it along with dried oregano, dried basil, salt, and pepper. Mix well to form a cohesive dough.
